Christmas dinners are a classic , a special moment in which the whole family gathers to enjoy a good meal, some drinks and, of course, good company.

These dates are special and are an opportunity to bring the whole family together which, surely, during the rest of the year is more complicated. Love is breathed in a night of celebration and good food as a tradition.

But vegetarians may be overlooked at the Christmas table, as baked turkey or shrimp are common. That’s why, in today’s article, we present you with different recipes so that vegetarians can enjoy a delicious dinner in the company of their loved ones.

Some tips before you start cooking

If you are going to surprise a family member, partner or friend who is vegetarian, first you should know that there are some differences between the products that different types of vegetarians eat or do not eat .

So be aware of this differentiation:

  • Lacto-ovo vegetarians : this type of person consumes eggs and dairy products.
  • Lacto-vegetarians : like the above, they consume dairy products. However, they do not eat eggs.
  • The classic vegetarians : are the strictest, as they eat neither dairy nor eggs, only vegetables.
  • Vegans : do not include products from an animal in their diet.

Proposal of Christmas dinner for vegetarians

Regardless of whether you want to serve a vegetarian menu for a group or for one person, you can leave your guests open-mouthed with some meat-free recipes. Remember, though, that not all vegetarians eat eggs and milk, so try to find out what your guests can and cannot eat. This way you will be able to get their tastes right and enjoy a great evening together.

1. Mushroom pâté

A delicious starter to start the evening in a delicious way.

Ingredients:

  • 1 onion
  • 500g of mushrooms (sliced)
  • 1 tablespoon of tahini
  • 80ml of olive oil
  • Salt, garlic or spices to your liking

Cut the onion and slice the 500g of mushrooms. Place them together on a tray and bake in the oven at 180º for 15 minutes. Once this time has passed, place the mushrooms and onion in the mixer. Add a spoonful of tahini (sesame butter), 80 ml of olive oil, salt, garlic or the species you like best. We beat, and we have it ready. We can spread this delicious pâté on toast, bread sticks with cereals or with any vegetable (carrots, celery, etc.)

2. Bruschetta with cream cheese and cherry tomatoes

An easy recipe to make but with a rich flavor to please the guests. Another delicious starter.

  • Ingredients
  • Bread, toast or square biscuits
  • Cherry tomatoes
  • 2 tablespoons of mayonnaise
  • 2 tablespoons cream cheese
  • Chives
  • Cilantro
  • Rocket leaves
  • Olive Oil

The first thing we’ll do is the “dip”. Mix the two tablespoons of mayonnaise and the two tablespoons of cream cheese and add the chives. We mix it again together with the coriander. We cut the bread in slices, although it is also possible to use toast or cookies, and we toast it in the oven at 150º with some olive oil. Cut the cherry tomatoes into slices and finally make the bruschetta: place the dip on top of the bread and then the cherry tomato. On the other hand, mix the olive oil with the rocket and add them to the bruschetta in small amounts.

3. Christmas quinoa with hazelnuts, apples and blueberries

Ingredients:

  • 1 cup quinoa
  • 2 cups of water
  • 2 cups hazelnut
  • ½ cup of blueberries
  • 1 block
  • ¼ Onion
  • 2 stalks of celery
  • Lemon
  • 1 tablespoon of olive oil
  • Parsley
  • 5 cambray onions
  • Salt and pepper

We rinse the quinoa and clean it. Place it in a pot, add salt and let it cook for 15 minutes. On the other hand, heat the spoonful of olive oil and fry the celery and the chopped onion for two minutes. Add salt and pepper and cook for three more minutes. Remove from the heat and add the parsley, blueberries and the green part of the finely chopped cambray onion. Chop the apple and add it too. Squeeze the lemon on top of these ingredients. Finally, add the cold quinoa and chopped hazelnuts and olive oil, salt and pepper.

4. Aubergine cannelloni

It’s a Christmas classic. Just replace the meat with vegetable ingredients. A very healthy recipe.

Ingredients:

  • Olive oil
  • 1 large onion
  • 3 cloves of garlic
  • 6 tomatoes
  • Cucumber
  • Basil
  • Oregano
  • Laurel
  • Salt and pepper
  • 1 cup of ricotta cheese
  • Mozzarella cheese
  • 4 black olives
  • 2 tablespoons chopped fresh basil

Put the olive oil in a saucepan and mix it with the garlic and onion and fry it. Add the chopped tomatoes to the frying pan after 5 minutes and mix with basil, oregano, bay leaves, cucumber, salt and pepper. Let it cook for 5 minutes and lower the fire and cover. This will be the sauce.

Leave the aubergine to soak for 5 minutes and then grill or broil it until it is golden on both sides. For the sauce, mix the ricotta cheese, black olives and fresh basil and add a little salt and pepper. Once mixed, place it in the thinnest part of the aubergine and roll it up. Then we add the sauce and then we put the mozzarella cheese on top. Bake it in the oven for 35 minutes in broil. It is ready.

5. Potato soufflé

A delicious light dish prepared in the oven for vegetarians and vegans.

Ingredients:

  • 4-5 Potatoes
  • â…“ Nutritional Yeast Cup
  • â…“ Cup of quinoa flour
  • Carrot
  • Broccoli

We rinse the potatoes and peel them. Then we cut them into fine pieces. We put them to boil for about 20 minutes so that they are well cooked. We drain and mash them without mashing them. Add the carrots, broccoli, nutritional yeast and quinoa flour and mix. Add pepper and place in the oven at 250º for about 15 minutes. It is ready to eat.

6. Oatmeal and gingerbread Christmas cookies

Healthy cookies to enjoy with your family on this special day

Ingredients:

  • 1 cup oatmeal
  • wholemeal flour
  • seeds or flaxseed meal
  • dates
  • gingerbread
  • lemon peel

In a bowl we combine all the ingredients and make the mixture with water. We mix until we get a wet dough. Grate the ginger and lemon and put it in the bowl. Cut the dates into small pieces and add them to the dough. On a wooden board we put the wholemeal flour and we put the dough we have made just above it to make the cookies with some moulds. On a plate with butter paper we put the cookies on top. We put it in the oven for about 30 minutes over medium heat. The delicious cookies are now ready to eat.
